The chili-flavoured smoked-rind Bagnolese pecorino made by the company Milk Coop comes straight to your table, giving those who love genuine flavours the chance to enjoy it. Made with milk from the Bagnolese sheep, a native Campanian breed found mainly in the areas surrounding Bagnoli Irpino and the Picentini Mountains. Straw-yellow colour, slight eye formation, soft paste and delicate taste are the main characteristics of the smoked-rind Bagnolese pecorino. The chili-flavoured smoked-rind Bagnolese pecorino lends itself to numerous uses, from immediate enjoyment on a cheese board to the preparation of elaborate recipes. A company with ancient roots, handing down milk processing from generation to generation. It was 1800 when it all began. Since then, over 200 years have passed and the Azienda Agricola Nigro has transformed into the Milk Coop Cooperative, joining forces with 8 members who daily supply the milk of the Bagnolese sheep for the production of pecorino cheese, and cow's milk from the Irpinia and Sannio pastures for the production of other types of aged and fresh cheeses. Years have gone by, but the philosophy has always remained the same: “to keep cheesemaking as tradition dictates, while always striving to improve the ancient production techniques”. The milk of the Milk Coop Cooperative comes from native Campanian breeds, raised with the utmost respect for their nature. On the Cooperative's farms, the animals' natural pace and rhythm of life are respected, and they are left free to graze among the countless wild herbs of their pastures. This biodiversity gives the milk they provide truly unique organoleptic and sensory properties. For this reason, the smoked-rind, aged and fresh cheeses produced by the Milk Coop Cooperative are seasonal and zero-mile (Km 0).
