We are located in a special area, a hilly zone within the Protected Area of the Monteferrato Natural Park, immersed in nature in an unspoiled environment. All our products are processed reflecting the characteristics of their natural territory, in full respect of nature. The result of processing the meat of the "MACCHIAIOLA MAREMMANA"® Black Pig. A rediscovered ancient pig breed. It offers unique aromas and flavours. We raise our black pigs in the woods of our farm. We are fortunate to be in a special area that allows us to raise them semi-wild, in wide open spaces. The Pancetta is the section of meat from the chest and abdomen, including the rind, and is about 3 cm thick. When sliced, the piece shows horizontal streaks of bright red lean meat, while the fat, oxidised by the air, turns pink. The aroma is intense and the flavour of the fatty part predominates over the lean part, producing a delicate, long-lasting taste in the mouth. It is one of the most classic cured meats of tradition, widely used in first courses or to flavour meat and egg dishes.
