the typical rounded Piedmontese biscuit made with meliga flour, the real jewel in the crown of the family's historic production. With the same passion, the pastry workshop makes delicious paste di meliga and handcrafted soft amaretti. Here is how the Batiaje come to life. The artisan workshop boasts a genuinely historic production, and for the care and methods of its craft it has earned the prestigious Artisan Excellence recognition from the Piedmont Region. Everything of the original, purely artisan character has been kept and jealously preserved. The latest descendant Mirella and her husband Roberto, the current owners, are happy to carry on the tradition and the historic value attached to it. The Batiaje have been handed down for six generations: today Mirella is the last descendant of the woman who, in 1850, first created the recipe for this famous biscuit. Paste di meliga in which the quality of the ingredients has always been safeguarded. Only the best are chosen, such as the eggs and the finest local speciality flours, all strictly GMO-free, as well as very fresh butter. The jealously guarded recipe is the historic one, never changed. For more than 160 years these delicious shortcrust biscuits have been baked in Barge. What is the secret of their goodness? At the base, a generous amount of maize flour and genuine butter. And of course the secret flavourings; even today they are made by hand, one by one. Today the classic product is also available in a version with dark chocolate chips, with chopped hazelnuts and mixed. Batiaje in Piedmontese means the rounded biscuit. Made with meliga flour, traditionally used since ancient times, it was prepared on festive occasions. For christenings “Anduma a batiajè" was the local expression used, meaning “Let's go and baptise”, and these particular biscuits were made to celebrate.
