We are in the province of Arezzo, home to the Birrificio Valdarno Superiore “BVS”, a craft brewery producing high-fermentation beers inspired by its local area. Production uses the finest selected raw materials, and this is where Birra Maius III Ale is brewed. Beyond the love for their own land, Tuscany, making craft beer also requires a true passion for beer itself. Beer with no compromises and no added flavourings or preservatives. The company has a little secret for making its products: water. It has its own private well drawing directly from the aquifers of extremely pure water beneath the brewery, fed by local springs. Here the water is particularly hard and rich in minerals, a feature that helps the yeast during fermentation, a key element for producing quality craft beer.
A pale, golden local Ale, made with barley malt, organic spelt from the Arezzo area, fine hops and the famous "drogo", a secret mix of spices from the Valdarno area. The most easy-drinking of the beers produced, it has 5% alcohol very well balanced by the spices of the drogo, whose recipe is more or less secret but generally contains nutmeg, cloves, coriander, ginger, cinnamon, with endless variations depending on the family that makes it. Alcohol content: 5% Vol. Fermentation type: high, bottle re-fermented. Colour: SRM 3.3. Bitterness index: IBU 19. Type: spiced local Ale. Food pairing: a beer made with the spice mix of the "Stufato alla Sangiovannese", a local dish with medieval origins. Try the pairing. Also try it with cheesecake and soft, fresh raw-milk cheeses.
