In this wonderful area of the Apennines lies the "Tre Rii" farm, in a truly unspoiled place, where nature expresses all its wild beauty, and where human presence is minimal and well harmonized with the environment. The family-run farm owns an estate of about 80 hectares called "Casarola" on the slopes of Monte Montagnana, in the municipality of Calestano, at a thousand metres above sea level. An area mainly made up of coppice woodland and about six hectares of meadow, with a typical farmhouse and a spring of pure water. An essential base for producing a top-quality cider, here they produce Wild Apple Vinegar. The company was born from the drive of Filippo, an oenologist who invested his savings here in Tre Rii with the idea that in the harshness of the Apennines, with cold and wind in winter and sun in summer, wine has always been made with apples, called Sidro (cider), apple vinegar and mead, and to make them of quality he gathers wild apples, enhancing their different varieties. With wild and native apples from the upper Val Baganza and upper Val Parma, the company produces an excellent aromatic apple vinegar with just the right acidity. This product has numerous nutritional properties and can be used as an ideal dressing in traditional cooking.
