Pipina - Nebbiolo d'Alba D.O.C. Nebbiolo d'Alba D.O.C. in Amphora: 30% of the whole clusters in a terracotta amphora about three metres tall. The must of the other clusters is added to the amphora. The subsequent ageing also takes place in a cocciopesto amphora. The result is a Nebbiolo with a unique and intriguing character, with lively tannins. Try it paired with grilled dishes. We are in the Langhe at Fontanafredda di Serralunga d'Alba, here the company La Biòca with 8 hectares of vineyards produces the finest wines expressing the territory, here is where La Pipina - Nebbiolo d'Alba D.O.C. is born

La Pipina - Nebbiolo d'Alba D.O.C.

Ours is a small business where nothing is left to chance. Here we produce our wines using only our own grapes. The vineyards are located between Monforte d'Alba, Novello, La Morra and Barbaresco. Areas particularly suited for the great wines of the Langhe. We take care of the entire process: from production, to ageing, to sale. We follow the whole process to guarantee the best quality. Technical sheet: La Pipina Grape variety: 100% Nebbiolo Harvest: manual in crates. Winemaking: we harvest the grapes two weeks after the main harvest of the vineyard. 30% of the whole clusters are placed in the amphora, the other part is destemmed by hand. Fermentation proceeds slowly in a heated environment, malolactic fermentation occurs spontaneously alongside alcoholic fermentation. The wine remains in contact with the skins for 2 months and is drawn off before Christmas. Bottled without filtration or other treatments. Ageing: 11 months in an earthenware jar. Production: approximately 2,000 to 2,500 bottles per year.
