We are in the Langhe area, in Fontanafredda di Serralunga d'Alba, where the winery La Biòca, with 8 hectares under vine, produces the finest wines expressing the territory: this is where Daje Mach - Verduno Pelaverga D.O.C. is born

Daje Mach - Verduno Pelaverga D.O.C.

Ours is a small business where nothing is left to chance. Here we produce our wines using only our own grapes. The vineyards are located between Monforte d'Alba, Novello, La Morra and Barbaresco. Areas particularly suited to the great wines of the Langhe. We take care of the entire process: from production, to ageing, to sale. We follow the whole process to guarantee the best quality. Grape variety: Pelaverga Piccolo 100% Harvest: manual, in crates. Vinification: destemming and crushing followed by cold maceration for 72 hours, with 2 closed pump-overs each day in a temperature-controlled steel tank. Fermentation lasts about 9 days, followed by maceration of about 15 days. Ageing: 10 months in wooden barrels of various capacities. Production: approximately 800 to 1,600 bottles per year.

Colour: ruby red with violet hues Nose: intense, fragrant, with its characteristic spiciness Taste: dry, fresh, velvety, with a black pepper aftertaste Serving temperature: 14-18°C Recommended pairings: cured meats, semi-hard cheeses, white meats such as roast rabbit. The name: âDaje machâ in Piedmontese dialect means âgive it your allâ.
