Langhe D.O.C. Rossese Bianco Cyrogrillo

Ours is a small business where nothing is left to chance. Here we produce our wines using only our own grapes. The vineyards are located between Monforte d'Alba, Novello, La Morra and Barbaresco. Areas particularly suited to the great wines of the Langhe. We take care of the entire process: from production, to ageing, to sale. We follow the whole process to guarantee the best quality. Technical sheet: Langhe D.O.C. Rossese Bianco Cyrogrillo Grape variety: Rossese Bianco 85%, Incrocio Manzoni Bianco 15% Winemaking: separate vinification for the 2 varieties, destemming and soft pressing without maceration, fermentation in steel tanks with temperature control (for the Rossese Bianco) and without (for the Incrocio Manzoni Bianco); blending carried out about 2 months before bottling. Ageing: on fine lees for 5 months in steel tanks. Production: approximately 2,500 to 5,000 bottles per year. Historical notes: In the 1400s the Counts Alfieri of Magliano, today a municipality in the Roero, issued a document strictly forbidding vassals from eating hedgehogs, referred to in the document as "cyrogrilli", hence the name of this wine.

Tasting notes

Colour: straw yellow with greenish hues Nose: characteristic, fruity Taste: dry, soft, harmonious Serving temperature: 10-12°C Recommended pairings: perfect as an aperitif, pairs well with shellfish, fish in general and medium-aged cheeses. It stands out from other Piedmontese white-grape varieties for its well-defined character, distinguished by quite particular aromas and flavour.
