What is Capuliato?
The term "capuliato" in Sicilian dialect means "chopped" and refers precisely to finely ground sun-dried tomatoes, mixed with garlic, basil, chilli pepper and extra virgin olive oil. It is prepared following ancient recipes handed down from generation to generation.
Capuliato represents the essence of the Sicilian sun, thanks to tomatoes naturally sun-dried, and holds within it the wisdom of the housewives of the past, who transformed a few simple ingredients into tasty, long-lasting preserves.
Uses in the Kitchen:
Pasta Dressing: simply mixed with a drizzle of warm oil and perhaps a pinch of toasted breadcrumbs.
