Domenico Mangiarano, a traveler and food and wine enthusiast, tells his story: over the years I have worked hard to find small producers who are able to faithfully reproduce gastronomic specialties and ingredients of the highest quality. Our products are passion fruit and hard work. And the rediscovery of recipes that hark back to tradition. And in this wandering of mine, the production of quality pasta, made with the best ingredients. With careful processing and slow drying and bronze drawn. I focused on the quality of two ingredients: exclusively water and durum wheat semolina from 100% Tuscany.
L'water is from a spring that comes directly from the Pistoia mountains. And the wheat is grown in Maremma where even the soil is specifically chosen by Maremma farmers. Pure expression of Tuscan culinary art with great attention to the genuine product. The wheat is grown in Maremma, a land of great tradition and agricultural vocation. This pasta is not just a food, but a journey into authentic flavors. The crops follow natural rhythms accompanied by the most modern agricultural techniques. Our supply chain is traced and controlled by the field to table! And we get a wheat from it high protein contentIt is produced every day, always in the morning and then left to dry for three days in special wooden cells. This slow drying process is a truly natural process. And it creates its distinctive character. Thanks to the ancient technique of bronze drawing, each half sleeve has a porous texture. This is a pasta shape that is perfect for holding sauce.

After drawing, the pasta is subjected to slow drying, for three whole days in wooden cells. A method that harks back to the past, natural and that allows
to the pasta of to ripen slowly, preserving all the properties of wheat and giving the final product a superior quality.
