Montasio is a cow's milk cheese that lends itself well to aging. Our Montasio Stravecchio PDO, with an aging of over 18 months, has a grainy and crumbly paste with pleasant crystals that release an excellent and balanced flavor on the palate, with a surprising note of sweetness that persists in the mouth. Excellent alone but also to embellish risottos and special pastas. I recommend it with a pear risotto!

In 2017  Piece celebrated ninety years of history and in all this time the quality and passion in the work carried out they have always remained unchanged over time. Faithful to own land of Friuli and to its products, then, once their experience has been refined, they dedicated themselves to the dairy world and its products, among which the Aged Montasio.

The Montasio PDO is a mountain cheese, is part of typicality of classic Friulian cheeses and surprises with its character sweet and genuine. Product with cow's milk of the PDO production area, transforms its taste according to the seasoning.

The flavor varies a depending on the seasoningnaturally passes from a soft and delicate flavor (Montasio Fresco) to a much more decisive taste (Montasio mezzano).

The Montasio Stravecchio PDO is produced in Carnia at 525 meters above sea level with raw milk thermised vaccine, this product has unique and essential characteristics, scrupulously controlled, verified and certified by the Montasio Protection Consortium.

The paste tends to have a straw yellow color with small holes well distributed throughout the paste.

Depending on its maturation, it naturally passes from a soft and delicate flavor (Montasio Fresco) to a much more decisive taste (Montasio mezzano) and even with a variant that reaches over 18 months (Montasio very old) looks like another cheese, another pasta, another crust, with a slightly spicy but addictive flavor.

Shipments of perishable products, which need to be stored at a controlled temperature, are made on Mondays, Tuesdays and Wednesdays. For orders placed from Thursday to Sunday, the shipment will take place in the following week, in order to avoid stocks on Saturday and Sunday and the consequent risk of alteration of the food.

Pezzetta

La storia dei formaggi Pezzetta inizia al femminile nel 1927 in un paesino del Friuli quando nonna Ninfa, rimasta vedova in giovane età e con tre figli piccoli da sfamare, grazie ad una licenza alimentare baratta al mercato di Udine prodotti del suo orto con forme di “Latteria” che stagiona, affina e rivende al suo paese. L'esperienza e la passione per i formaggi si tramanda per tre generazioni ed oggi i fratelli Marco e Paolo Pezzetta dispongono di 12 celle per stagionature differenti, di un  caseificio ad Ovaro a 527 m s.l.m. nell'alta Carnia e di un prosciuttificio a San Daniele del Friuli. Ecco perché sono in grado di offrirci non solo stupendi e pluripremiati formaggi, ma anche prodotti tipici del territorio friulano: un territorio che riserba inaspettate sorprese ed è in gran parte ancora da scoprire.
