Artisanal BIO Zucchini Pesto

on the plateau of Loro Ciuffenna near the vines and olive trees, we grow various Mediterranean species at 300 metres above sea level, while in the mountains we gather wild berries and chestnuts and much of the fruit we use for our preserves. 60 species grown each year that we process in our workshop. Over the years we have gained great experience in the field of organic farming and in the processing of agricultural products. But our focus, besides cultivating the land, is also directed towards the processing sector. From this idea a range of specialties typical of our region and our mountains was born. Yet at the same time they present that distinctive exclusivity of recipes, combining often forgotten tastes and flavours. Our aim is to offer recipes that require long and careful processing and to make them available so you can savour unique, traditional flavours. Each of our products has a unique flavour. Prepared following every step, with simple methods and genuine ingredients. The pesto with freshly processed zucchini enriched with extra virgin olive oil, the right amount of vinegar, almonds, aromatic herbs, cane sugar, pepper. The pestos from the Azienda Agricola Radici are prepared with fresh vegetables and made with careful attention at every stage of processing. The various cooking stages take place, depending on the ingredients used, in different pans. Naturally, no flavour enhancers, thickeners or other additives are used. They can be used on toasted bread, then briefly grilled in the oven. Don't underestimate them as an accompaniment to eggs and cheeses, spread on croutons for delicious appetisers.
