A line of fish charcuterie that, thanks to special marinades, original smoking methods and different cooking techniques, takes on a unique personality and flavour while retaining the delicacy and taste of charcuterie: this is how the Tuna Bresaola with wild herb aromas came to be
The production of fish charcuterie starts first and foremost with research and selection of the finest raw material. The processing, following the shop's own recipes, takes place in the workshop where, thanks to the use of Mediterranean scrubland herbs, salts and peppers from various origins and special smoking over apple and olive wood, these creations of the sea come to life. The Tuna Bresaola with wild herb aromas is a fine gourmet product. The star is Mediterranean fish, carefully selected and crafted with "secret" recipes designed to offer a gastronomic proposal with real identity. The bresaola undergoes a marinating process that closely follows the traditional charcuterie method, followed by curing. It is a product with unique characteristics thanks to the use of uncommon aromatic herbs and Sichuan pepper. New flavours and new aromas, a great desire to experiment and innovate while still following processes perfected through the experience of artisans of the sea. The Bresaola has an intense flavour and savouriness, and pairs very well with ingredients that balance its intensity, such as: sweet and sour baby onions, melon, and yellow cherry tomatoes on a bed of baby lettuce. Also worth trying on its own, served with aperitifs. Â
