we have a history of well over thirty years of processing and curing the finest catch of the Mediterranean, with recipes handed down since the late 1800s from father to son. This is a gastronomic product of great quality: the salmon comes from the cold waters of the North Atlantic Ocean, the unspoiled waters of the Faroe Islands, a true natural paradise dotted with fishing villages. Faroe Islands salmon is particularly prized, as it is farmed without antibiotics and at low density, directly in the unspoiled waters of the North Atlantic, rich in nutrients. The very same waters where wild salmon swim. Its flesh is tempered by resisting the cold water currents, which make it special. The company treats the salmon with a gentle marinade and with a special smoking process using chestnut wood from the Tuscan Apennines. Back in the time of the tsars, smoking was carried out using the âhanging methodâ, hanging the salmon fillets with a cord tied around the tail inside an oven where prized oak wood burned slowly. The flavour obtained was truly special. Today, thanks to expert smokers and the technique perfected by the company, it is possible to enjoy this delicacy once again. The result is a bold yet balanced flavour, where the aroma of the wood used for smoking (often chestnut, beech, or oak) blends with the natural sweetness of the fish. It is a ready-to-eat dish, very versatile, perfect both as an appetizer and for use in your recipes. An ideal product for quick preparations. It has a soft flavour and an intense aroma. It holds within it all the flavours of the fillets, and is made from selected smoked salmon of premium quality.
