It was born between the late 1800s and early 1900s in southern Italy to make drying and salting easier. Already by the mid-1900s, thanks to migration from the south, it also spread to the North, and once packed in oil, the slices became a much-loved flavour enhancer for pizzas and sauces. Today its popularity has grown thanks to creative cooking and gourmet interpretations. The idea of slicing it into rounds arose both from the abundant availability of Calabrian chilli peppers and the need to find a way to preserve it through winter. Moreover, sliced thin, it loses water easily and absorbs vinegar and oil well.
How to use Sliced Chilli Pepper
Try it raw on bruschetta. With warm bread and extra virgin olive oil. Add it to a sauté. Perfect on pizza or focaccia to bring out the flavour.
