This is a sparkling wine with unique characteristics. Made from selected grapes drawing on the expertise of superior-quality winemaking. Experience is a fundamental element, as is skill, in order to obtain a good sparkling wine from Pinot Noir grapes. And naturally a suitable terroir is also needed. It is a grape variety particularly sensitive to the terroir and the production area. As a result, sparkling wines with different characteristics are obtained. It benefits from high-altitude cultivation thanks to the significant temperature swings between day and night. It is widely used as a base for producing sparkling wines using the classic method, giving body and complexity. Extremely elegant. It invites an intriguing tasting experience.

Pinot Noir vinified as a white wine. Clear, elegant with its fine and silky perlage. On the nose it presents delicate hints of bread crust with mineral notes and a light nuance of redcurrant. Savoury, persistent taste, excellent balance in its freshness. On the palate it is fresh, savoury and full. Recommended with fish-based dishes, molluscs and shellfish, raw fish, fish tartare and vegetables. Excellent as an aperitif. Grape varieties Pinot Noir 100% Vineyard location High mountain, 1,000 m above sea level Harvest Hand-picked: first half of August Production technique Vinification of whole grapes as white wine, with soft pressing. Low-temperature fermentation. Tirage during the spring following the harvest. Second fermentation in the bottle at a controlled temperature of 17°. Maturation In contact with the lees for 24 months, placed on riddling racks with manual remuage. Disgorgement carried out in March 2017. Followed by bottle ageing.
