Snails (bronze-drawn semolina pasta) 500 g BIO Bronze-drawn Snails are an artisan pasta shape characterised by a rough, porous surface, achieved through the ancient bronze-drawing method. The pasta is more porous and rough and, besides holding up excellently to cooking, is perfect for holding onto sauces. An ideal shape for rich sauces, ragù, creams and veloutés. Slow drying makes the pasta more digestible and flavourful. Buy now on Foodaloo the bronze-drawn Snails made from Italian organic durum wheat. The jams and preserves from Biosolidale are handcrafted using exclusively organic products, mostly sourced from local farms: this is how the Lumache (bronze die-cut) 500 g BIO came to be

Lumache (bronze die-cut) 500 g BIO

In our project we have embraced Organic farming as both a choice and a philosophy, respecting the land and its fruits. Our philosophy also includes supporting the small businesses of our region; we have built a network of small enterprises operating with the same organic philosophy, so as to offer an alternative to the traditional supermarket. We aim to raise consumer awareness of mindful purchasing and the importance of the short supply chain and organic produce. For all our products the philosophy is always the same: for jams and preserves we use only organic products, plenty of fruit and a touch of organic cane sugar. The oil-preserved vegetables and spreads are made with the best local fresh vegetables, to which we add top-quality Extra Virgin Olive Oil from Lazio, to achieve a product of truly unique excellence.

The Bronze Die-Cut BIO Lumache are made according to the principles of organic farming, with an artisanal production process.

The organic farming cooperative LA TERRA E IL CIELO was founded in 1980 through the pioneering initiative of its founding members, at a time when organic farming was still in its infancy and practically unknown. We are located in the Marche region, a land long known for its agricultural vocation. Here, since the very beginning of its activity, the cooperative has cultivated crops following not only the philosophy of organic farming but also biodynamic farming. This was at a time when people were only just beginning to talk about organic produce. The goal was to revive ancient grains through cultivation methods that respected the environment and nature. This led to the rediscovery of ancient varieties of grains and legumes, selected for quality, one of the cornerstones of the cooperative's activity. Hence farro (triticum dicoccum), particularly suited to pasta-making. Hulled barley for roasting, once used as a coffee substitute. Millet and three ancient durum wheat varieties (Senatore Cappelli, Taganrog and Etrusco). Cicerchia (lathyrus sativus), once considered the legume of the poor, represents a symbol of their commitment to quality. These are productions characterised by a traceability that is almost entirely local and regional, something very few companies in Italy can claim.

Bronze Die-Cutting

The pasta is made exclusively with durum wheat semolina or semolina blends and water, with table salt in a maximum proportion of 4%. Semolina is obtained by milling durum wheat. The water should be slightly hard and lukewarm: its purpose is to form the dough. To produce pasta, the classic method involves the following steps. The semolina or semolina blend is mixed with 20-30% water to form gluten and hydrate the starch; the resulting dough is then kneaded (gramolatura) until it reaches the right consistency. Die-cutting: The dough is forced through a die with the desired shape. With bronze dies, the pasta comes out rougher and absorbs sauce better. Extrusion is a more modern method in which the same steps described above take place continuously within the same machine. The results are equivalent; only the machinery technology changes.

The Organic Bronze Die-Cut Lumache are a unique pasta shape, designed to capture and enhance any type of sauce thanks to their concave, enveloping form. Made with organic durum wheat semolina and pure water, they are carefully crafted following Italian artisanal tradition.

Bronze die-cutting gives the surface a natural roughness that holds sauces excellently, while slow drying at low temperature preserves all the flavour of the wheat and guarantees perfect hold when cooked.

Slowly dried at low temperature, they retain intact the nutritional properties of the wheat and guarantee a perfect texture when cooked.

Lumache are perfect for tasty, creative dishes, both for everyday cooking and special occasions
