Made with recyclable materials, the Bag in Tube is designed to protect the oil from light and oxygen, two of the main enemies of its preservation. The flexible inner bag, enclosed in an elegant and sturdy outer tube, compresses as the oil is dispensed, preventing air from entering. The dosing tap fitted with an anti-oxygen valve allows the oil to be poured simply and cleanly, preserving its aromas, freshness and organoleptic characteristics even weeks after opening.

Variety:Â 100% Nocellara del Belice. Nocellara del Belice is the most prized cultivar among native Sicilian varieties. Cultivation: 1000 trees, aged between 60-70 years, located between the Cusa quarries and the archaeological park of Selinunte. Production area: Menfi, in the province of Trapani, Sicily. Soil: Flat, red - sandy. Altitude: 110 m above sea level. Harvest time: Second-third week of October. Harvesting method: The unripe harvest is done by hand and begins in the early hours of the morning when the temperature is still cool. The olives are placed in well-ventilated 20 kg crates and, after an initial defoliation, immediately taken to the mill, which is located 10 minutes from the olive grove, and pressed within 6 hours of harvesting. Milling and Extraction:Â Cold-pressed with a proto-reactor, malaxation at controlled temperature in the absence of oxygen, with a disc separator preserving the organoleptic qualities of the oil. Tasting notes: Colour: from yellow to intense green with a very low acidity that remains constantly below 0.2 Aroma: on the nose, a medium-intensity green olive fruitiness accompanied by notes of almond, green tomato, cut grass, artichoke and aromatic herbs Flavour: enveloping with broad vegetal notes and pleasant sensations of bitterness and spiciness in a harmonious balance, with a fresh and persistent finish. Nutraceutical properties: high in polyphenol content, oleic acid, vitamin E and therefore nutraceutical Pairings: Raw, it enhances dishes such as minestrone, vegetables and seafood or orange salad, raw fish preparations and meat tartare.
