Oil production
In Marche, extra virgin olive oil is produced using traditional methods. The olives are still harvested by hand or with the help of equipment that respects the fruit. Within a few hours of harvesting, the olives are pressed at the mill to guarantee maximum freshness and quality of the oil.Synonyms: Piantone (Macerata), Raggiola (San Severino), Oliva Riccia (Pieve Favera), Rosciola (Tolentino), Limoncella (Monte San Martino), Maglianese (Gabbiano di Fermo), Nibbiu (Treia).
Growing Area: a Marche cultivar, mainly found in the province of Macerata. With the highest concentration in the municipalities of Mogliano, Macerata and surrounding areas, extending to the inland areas of the province, at altitudes above 600 m above sea level.
Production Characteristics: The trees come into production early. It is grown in poor, gravelly soils due to its high drought resistance. Flesh consistency and resistance to detachment are high, even at an advanced stage of ripeness. The optimal harvest period is around mid-November.
A top-quality oil. It has a light fruitiness. On the palate, smooth and sweet. It has a high oleic acid content and a good ratio of unsaturated to saturated fats. A dual-purpose variety.
It pairs well with white meats and light fish dishes, as well as soups.
The Piantone di Mogliano olive variety has a late and gradual ripening (invaiatura). Fruit colour ranges from light green to purplish red, with visible lenticels. Widespread throughout most of the Macerata area. Flesh consistency and resistance to detachment are high at an advanced stage of ripeness. It has a medium-large drupe of about 2 â 3 g, ovoid in shape.
