The Azienda Due Palmenti is located in Pedara, a village situated on the slopes of Etna in the Due Palmenti district in the heart of eastern Sicily, a land rich in great rural traditions handed down for generations: this is where Sicilian Thyme is produced. Sicilian Thyme green hills and majestic Etna in the background, the climate here is characterised by mild winters and hot, sunny summers. The sandy soil is rich in elements originating from the lava flows that have followed one another over the centuries, making this a place well suited to hosting a great variety of native and local crops. Here the habitat is ideal for aromatic herbs, which grow vigorous and intensely fragrant, as well as rich in aromas and intense, unique flavours. The company supports sustainable agriculture with a low environmental impact, with the precise goal of obtaining genuine products that showcase the typical character of the local area and its traditions, while achieving the highest quality standards. Here, seasonings and aromatic herbs are grown for every recipe and every moment of the day. the genus Thymus probably owes its name to the Latin âTymisâ or âThymòsusâ, meaning âfragrantâ, or to the Greek Thymòs, meaning âsoulâ; it may also derive from the Egyptian âthamâ, a term referring to a plant used for washing bodies to be embalmed. It is a species typical of the Mediterranean scrubland, with small, downy, whitish leaves. It flowers from spring to autumn, its ideal habitat is sunny soil, and it is harvested from May throughout the summer. The leaves and flowers are used. Thanks to its aroma and fragrance, thyme is much loved in the kitchen for enriching and seasoning soups, sauces, legumes, vegetables, mushroom recipes, oils, aromatic vinegars and for preparing roasts. Particularly rich in thymol, it has antiseptic, antibacterial, disinfectant and diuretic properties; it is effective against numerous urinary, gastrointestinal and respiratory infections.
