the name majorana seems to derive from the Latin term â
amaracusâ, from the Greek â
amà rakosâ, meaning
fragrant plant, due to the intense and highly pleasant scent it gives off. It is a perennial herbaceous plant with small leaves covered in fine down. It flowers in summer, producing small pinkish-white flowers. Its ideal habitat is between the plains and hills, in nutrient-rich, sunny soils. Harvesting takes place between July and September.
In the kitchen it is ideal for preparing
fish or meat dishes as well as soups; a classic pairing is with
mushrooms, eggs, legumes and cheeses.
It has numerous properties due to the presence of essential oils and tannins as well as other substances. It is an aromatic,
bitter-tonic, digestive, carminative, antispasmodic, analgesic, diuretic,
balsamic and stimulating herb.
