The
Azienda Due Palmenti is located in
Pedara, a town situated on the
slopes of Etna in the Due Palmenti district in the heart of
eastern Sicily, a territory rich in great rural traditions handed down for generations, and this is where
Salmoriglio Siciliano is produced.
Green hills and majestic
Etna in the background, the climate here is characterised by mild winters and hot, sunny summers. The sandy soil is rich in elements originating from the lava flows that have followed one another over the centuries, making it a place suited to hosting a great variety of native and local crops. Here the habitat is ideal for
aromatic herbs, which grow vigorous and
intensely fragrant, as well as rich in aromas and
intense, unique flavours.
The Company supports
sustainable agriculture with a
low environmental impact, with the precise aim of obtaining
genuine products that enhance the
typical character of the territory and local traditions while achieving the highest quality standards. In 2018, the young agronomist Martino started out by purchasing, together with his family, an abandoned, fully terraced plot of land. He cleared it completely and began his project of growing aromatic plants, enhancing the
typical character of the territory, thus obtaining unique aromas and fragrances.
Salmoriglio Siciliano
A niche production of
aromatic herbs grown to showcase the
aromatic plants of Etna, respecting the environment and
biodiversity. Skilful
blends of herbs make up the range of
seasonings. Prepared dressings and
aromas of flavour and colour, from the simplest to the most elaborate, with the aim of making recipes unique for every moment of the day. From breakfast products to first courses, main courses and desserts, aiming to combine tradition and innovation.
Salmoriglio is a
Sicilian sauce, called
"Salamarigghiu" in Sicilian, much loved for flavouring meat and fish, salads and grilled or barbecued vegetables. The pack contains a prepared mix with the original recipe, with the ingredients already measured out and ready to use.
To prepare the
salmoriglio sauce: mix three parts oil, one part of the prepared mix and one part lemon juice for fish recipes or vinegar for meat recipes, to make the emulsion to use both during cooking and on finished dishes.
