We are on the slopes of the
Pratomagno, in one of the most beautiful areas of
Tuscany, the farm is spread across plots of land that range between 300 and 1300 metres in altitude, an ideal physical setting for creating a wide range of products, and this is how our
Chestnut Flour came to be
Chestnut Flour
on the Loro Ciuffenna plateau, near the vines and olive trees, we grow various Mediterranean species at 300 metres above sea level, while
up in the mountains we gather wild berries and
chestnuts and much of the fruit we use for our jams.
Over the years we have gained great
experience in organic farming and in the processing of agricultural products. But our attention, beyond
working the land, is also focused on
processing. From this idea came a series of
specialities typical of our region and our mountains, which at the same time have that distinctive exclusivity of recipes combining
flavours and tastes that are often forgotten. Our aim is to offer recipes that require long, careful processing and to make them available so unique, traditional flavours can be enjoyed. Each of our products has a unique flavour. Prepared following every step, with simple methods and
genuine ingredients.
We have a great desire that drives us to carry on our project every day: to leave our children a world that takes the
best from the past to
rediscover our roots!
This flour is made only with
chestnuts from the
farm's chestnut groves. Dried in the traditional
Pratomagno drying sheds. Slowly dried over a
chestnut wood fire. They are then shelled and selected one by one. Only chestnuts completely free of pericarp are used. Drying over a wood fire gives it a lovely toasted aroma. A natural scent typical of a product made following an unchanged tradition. A
naturally sweet flour,
finely ground, with a lovely
light hazelnut colour.
Ideal for traditional sweet recipes, but not only. Try it to
enrich your cakes and biscuits or to make
delicious pancakes!
