  • Lunigiana Tartufo in upper Tuscany works with truffles that Simone, a passionate and truffle expert himself, forages for in the woods of the Lunigiana together with porcini mushrooms, both exceptional resources of the unspoiled Tuscan-Emilian Apennines, staying true to tradition and his own roots he has managed to create a unique product, a true excellence that combines Lunigiana cuisine with prized truffle and Apennine mushrooms: this is how the Classic Artisan Lunigiana Testarolo came to be
  • Testaroli are a very ancient soft wheat pasta format (some sources indicate their use as far back as Roman times), whose use developed in the area of the Lunigiana and the far eastern Ligurian coast. This pasta's distinctive feature is the cooking process that gives the product its very name. In fact, the dough made from type O flour, salt and water at the right consistency, was cooked for a few minutes (without being turned) in special cast-iron or terracotta pans called "testi", from which they take their name. The company wanted to celebrate the ancient tradition of Testaroli, offering good food lovers three versions of the product: the classic testarolo, the mushroom testarolo and the truffle testarolo.
  • Recipe for testaroli: Cut the testarolo into small squares (about 5 cm), immerse them in a pot of boiling salted water with the heat turned off (bring the water to a boil, then turn off the heat) for about 2 minutes. Drain with a slotted spoon and season with a knob of butter.
