Today, cultivation for this purpose is limited to a very small area in the municipalities of Castelbuono and Pollina, in the province of Palermo. Manna is obtained by incising the ash trees and letting the sap solidify. From the incision made in the trees, the sap oozes out and settles on the trunk. On contact with air it slowly solidifies.
