In 2017 Pezzetta celebrated ninety years of history, and throughout all this time the quality and passion behind the work carried out have always remained unchanged – and this is where FormaggioUbriaco Sot la Trape is born.
FormaggioUbriaco Sot la Trape
Faithful to their own Friulian land and its products, once they had refined their expertise, they dedicated themselves to the world of dairy and its products. Among these, a true speciality is the FormaggioUbriaco, a cow's milk cheese with a semi-hard, compact texture. Its colour ranges from white to straw yellow, with a characteristic aroma of milk and must. The rind is hard, wine-lees coloured, concealing a pale cheese with a full, aromatic flavour, fragrant scents and a hint of wine.
After 5-6 months of ageing, the cheese wheels are cleaned and selected, placed in vats and covered with unfermented grape must. Here they remain immersed for about ten days. Once removed from the vat, they are placed on shelves and coated with the same grape marc and water or seed oil. The wheels are then roughly cleaned and aged further for at least one month.
The ageing process in red wine marc gives Ubriaco Sot la Trape its unmistakable flavour and aroma.
