 here it is the art of the cheesemaker who has always decided when the curd is ready to be broken, when the cooking is just right and how to cut it, his expert hands work it before placing the mass into the moulds. The Latteria di Branzi is a cooperative dairy that has been operating since 1953. Born from the very initiative of the Branzi cheesemaker Midali, who succeeded in his goal of making high-quality cheese available all year round by collecting milk every day from the small producers of the Val Brembana at the cooperative dairy. Here tradition is still very important, mountain pasture grazing, the quality of the forage and the ancient processing techniques result in the great flavours of this land.
