Spiced Caciottine We are in the green Mugello, here in our farmhouse dairy we produce cheeses just like in the old days. The caciotta is indeed processed in a boiler and handcrafted only, with no added industrial starter cultures. Raw milk cheese from Alpine Brown cattle. Our cows graze freely on our hills, feeding on wild spontaneous grasses. In winter we feed them mainly with organic fodder produced on our farm. The Blu is our blue-veined cheese made from whole cow's milk, semi-hard raw paste with over 3 months of maturation. Bold and intense flavour. Try it as a starter or after a meal with a fig compote! The Latteria Riccianico is a small dairy in Mugello, located in an unspoiled area among the woods and hills of Firenzuola. Here we produce raw milk cheeses with organic fodder from our own farm, and this is where Blu di Riccianico is born Blu di Riccianico ours is a farmhouse dairy. We produce all our raw milk cheeses and the rinds are untreated. We have our own herd and feed our cows mainly with the organic fodder we produce on our farm. From spring to autumn our cows graze freely and feed on wild spontaneous grasses. This raw milk cheese is handcrafted only, with no added industrial starter cultures. A blue-veined cheese made from raw cow's milk, which retains all the aromatic richness of unpasteurized milk. The inoculation of Penicillium roqueforti promotes the development of blue-green veining in the paste, giving a deep and complex flavour profile.

The paste is crumbly and creamy, with a thin, natural rind. On the nose, notes of mushroom, undergrowth, fermented milk and hazelnut can be perceived. On the palate, the raw cow's milk blue is persistent, bold, but never excessive, with a pleasantly spicy edge that increases with ageing.
