Formaggio Scoppolato Orzo e Birra is a sheep's milk cheese, a pecorino made unique by its processing and special ageing. Wrapped in barley grown in the Lucca area, crushed and soaked with beer. It ages this way for 45 days. For a further 30 days, still wrapped in its layer of barley, the wheels age stacked one on top of the other and finish ageing in the cellar. An intriguing and unique taste, with intense aromas. Serve it on a nice cheese board with crostini and a craft beer! This is how Lo Scoppolato came about, slowly becoming, with sacrifice and love, a sought-after product appreciated by food journalists, Michelin-starred chefs but above all by the many enthusiasts of good cheese. A dream that became a wonderful reality! Because, let's remember, never abandon your dreams when we wake up in the morning. It is a sheep's milk cheese with an excellent flavour, made unique by the special processing that the cheesemaker jealously guards. During the process, the product undergoes ageing at a particular humidity level in order to obtain a properly aged product and to enhance its flavour. Lo Scoppolato is a flavour experience. Not only for those who love cheese but also for those who wish to discover an intense flavour. The curiosity stems from the name given to the product. Scoppolato in fact comes from the story of a shepherd. His name was Tristano, known as Pedona. Every time Pedona met his master, he would take off his hat, the so-called "coppola" (cap).
Barley and beer represent a true flavour experience. After about 45 days of maturing, the cheese is left to age in barley and beer. We use a selected barley, a Tuscan barley from the Lucca area. To help the barley absorb the beer, we crush it beforehand and soak it with beer. The wheels of cheese are covered with a layer of barley and stacked one on top of the other. Ageing then continues for another thirty days. Once ready, it continues to age in the cellar. The process gives the wheels their irregular shape, with irregular rinds covered in barley. Recommended pairings: once ready, the cheese pairs very well with a fruity red, with aromatic whites. It will be perfect with craft beers. It is the "intriguing" cheese for starters and perfect for a good cheese board. Complex in aroma, unique in flavour, with a pleasant acidity.
