Pezzetta has a ninety-year-long history and throughout all this time the quality and passion infused into the work carried out have remained unchanged, and this is where the Insolito Blu con Fichi is born
The company is located in a small village near San Daniele, in the heart of Friuli. Here the tradition of cheese-making has deep, age-old roots, well rooted in the territory, where cheeses faithful to tradition and to the territory itself are produced.
The Pezzetta family's dairy is located in Alta Carnia at Ovaro, at an altitude of 525 metres. Production is rigorously careful and faithful to tradition, the methods have always been artisanal with a careful selection of milk and genuine products thus guaranteeing absolute quality. The blue-veined Blu ai Fichi from Alta Carnia is a dairy specialty, an aging process that stems from the classic pairing of cheese with fruit. In this particular case the cheese is a blue-veined cheese that is enriched on the rind with honey and the addition of figs or raisins. Ideal to serve on a lovely platter as a tasty appetizer. The pairing with figs, with their natural sweetness, is perfect and balances the characteristic intense flavour of blue-veined cheeses. The choice of fig makes it easier to open up to bolder flavours. Â
