Bricco della Croce is located in the heart of the
Langhe, a wonderful company with a passion for farming and cheeses, raising native breeds of goats and sheep in
semi-wild conditions – this is where the
Toma di Pecora delle Langhe is born
Toma di Pecora delle Langhe
The animals, in the harsh, unspoiled countryside, feed on
fragrant wild herbs rich in essences, aromas and flavours that can be found in the cheeses, strictly produced with
raw milk!
It is a raw sheep's milk cheese with a short ageing period. A cheese with a
soft, elastic paste that tends to become creamy with ageing. As the days go by, a
very light bloom forms, giving it a distinctive mushroom aroma, which gives way to
buttery, sweet notes.
In June 2023, the first Festival dei Formaggi Piemontesi (Piedmont Cheese Festival) took place. More than 250 types of cheese took part, across a total of 19 categories. The company took part with the 2 cheeses symbolic of our dairy production and representative of our Langa area. Roccaverano DOP and the Toma di Pecora di Langa. Here, our two cheeses were awarded the bronze medal in their respective categories, ROCCAVERANO DOP and SHEEP'S CHEESES.
