Bricco della Croce, is located in the heart of the
Langhe, a fantastic company with a passion for farming and cheeses, raising native breed goats and sheep in a
semi-wild state. This is where the
Roccaverano DOP pure Goat is born
Roccaverano DOP pure Goat
In the unspoiled
rugged nature, the animals feed on
fragrant wild herbs rich in essences, aromas and flavours that are found in the cheeses produced strictly with
raw milk! The milk is
milked every day from the animals raised on the farm, which graze in the meadows adjacent to the farm, feeding on grasses and shrubs. A
rich and tasty
milk, that of our
Camosciata delle Alpi goats and native "Langhe" and "Roccaverano" breeds, which we process every day to produce our Roccaverano Dop. The products retain all the organoleptic characteristics, such as the
scents and flavours of the nature surrounding the farm.
The production process
To produce our Roccaverano, the milk from the
evening milking is combined with that of the
morning milking. And we process it strictly raw, meaning it does not undergo heat treatment or pasteurisation. This is to preserve intact all the
aromatic nuances and organoleptic qualities. Notes that we find in the cheese thanks to grazing amid nature. Where the goats feed freely on
wild herbs and shrubs. But that's not all, this way we also preserve all the
quality of the milk. We preserve its vitamins, mineral salts and
lactic bacteria for the wellbeing of our body.
Awards
In June 2023, the first
Piedmontese Cheese Festival was held. More than 250 types of cheese took part, across a total of 19 categories. The company took part with the 2 cheeses that symbolise our cheese production and represent our Langa territory. The Roccaverano DOP and the
Toma di Pecora di Langa. Here, our two cheeses won the
bronze medal in their respective categories, ROCCAVERANO DOP and SHEEP'S CHEESES.
