The

TheÂ
sweet dried ricotta is a classic in the kitchen, much loved grated over a nice plate of pasta or used to make a variety of recipes.
The goodness of this product comes from a careful selection of raw materials. As well as from the completely artisanal processing of the milk.
The milk used to obtain this specialÂ
sweet dried ricotta is that ofÂ
sheep and cows typical of the Irpinia pastures. And especially those that cross the area of the Picentini Mountains and the Bagnoli Plateau.
Immersed in nature, these animals are free to graze in the pastures, feeding directly from the land. Their diet is carefully controlled. Not at all adulterated by chemical feed, this ensures that the milk is enriched with
nutrients and unmatched organoleptic properties.
The intent to bring only genuine flavours to the table, therefore, also translates into the use ofÂ
traditional processing methods. According to which, with the great skill of the cheesemaker and his staff, the ricotta obtained from the whey is hand-sieved. Then left to age for aboutÂ
1/6 months in special cells with controlled ventilation, humidity and temperature.
Aged ricotta
To add a further special touch, in some cases we add
chili pepper to the mixture, thus obtaining
spicy aged ricotta.
Available in theÂ
sweet variant, theÂ
aged ricotta produced byÂ
Milk Coop has a fairly intense ivory colour and a compact texture.
TheÂ
sweet dried ricotta isÂ
sold online at a price of Euro 4,00 and weighs approximately 300 grams.
Milk Coop is a company with ancient roots, passing down milk processing from generation to generation.
It was 1800 when it all began. Since then, more than 200 years have passed and theÂ
Azienda Agricola Nigro has transformed into theÂ
Milk Coop Cooperative, joining forces withÂ
8 members who daily supply the milk ofÂ
Bagnolese sheep for the production ofÂ
pecorino cheese and, for the production of other types ofÂ
aged andÂ
fresh cheeses,Â
cow's milk from theÂ
Irpinia andÂ
Sannio pastures.
Years have passed but the philosophy has always remained the same: âto maintain cheesemaking as tradition dictates, always aiming to improve the ancient production techniquesâ.
The milk of theÂ
Milk Coop Cooperative comes fromÂ
native Campania breeds, raised with the utmost respect for their nature. On the Cooperative's farms, the animals' natural pace and rhythms of life are respected, and they are left free to choose among the countless wild grasses of their pastures. This biodiversity gives the milk they produce trulyÂ
unique organoleptic and sensory properties.
For this reason, theÂ
semi-hard,Â
aged andÂ
fresh cheeses produced by theÂ
Milk Coop Cooperative areÂ
seasonal andÂ
locally sourced.
