according to the principles of organic farming and with the finest selected vegetables, also organic, without any thickener. The entire production process is artisanal, from harvesting the produce to cutting it. In our project we have embraced Organic as a choice and as a philosophy, we respect the land and its fruits. Our philosophy also includes supporting small businesses in our local area; we have created a network of small businesses operating with the same organic philosophy as ours, so as to offer an alternative to the traditional supermarket. Raising consumer awareness of conscious purchasing and the importance of a short supply chain and organic produce. For all our products the philosophy is always the same: for jams and preserves we use only organic products, plenty of fruit and a little organic cane sugar. The oil-preserved products and creams are made with the finest fresh local vegetables, to which we add top-quality Extra Virgin Olive Oil from Lazio, to achieve a product of unique excellence.
We are in Montecompatri, near Rome. This is where the small producer Tofu Bio Otani's project was born. A virtuous project that required great dedication. Tofu production was started by Ruriko Otani in 1992. Over twenty years of experience in producing organic Tofu. A project born from important training, as the producer trained alongside a Japanese Tofu maker (Otani). The idea was in fact to produce an artisanal tofu following the dictates of Japanese tradition. This allowed him to achieve a high-quality product, far removed from commercial ones.
Japanese tofu production is based on curdling soy milk with nigari, followed by pressing and cutting into various shapes, offering a wide range of tofu suited to different culinary preparations. To make it we use organically grown soybeans and follow the traditional Japanese recipe, which does not include additives or chemical solidifiers. The machinery was purchased from Japan, specially made for Tofu production.
