- In upper Tuscany, Simone works with truffles that he himself searches for in the woods of the Lunigiana; faithful to tradition and passionate about his own land, he has managed to create a unique product, a true excellence that combines Lunigiana cuisine with fine truffle: the truffle testarolo, a tasty first course that is best enjoyed dressed with good quality butter! The testarolo is the traditional cooked batter from the Lunigiana area; in the past, every family made their own, with a recipe made with just water, flour, salt and slow cooking that over time came to be made in testi, the large pans from which it takes its name.
