• In upper Tuscany, Simone works with truffles that he himself searches for in the woods of Lunigiana, faithful to tradition and passionate about his own land, he has managed to create a unique product, a true excellence that has combined Lunigiana cuisine with the fine truffle: the truffle testarolo, a tasty first course that is best enjoyed dressed with good quality butter! Testarolo is the traditional cooked batter of Lunigiana tradition; in the past, every family made its own, with a recipe made with only water, flour, salt and slow cooking, which over time has been passed down using testi, the large baking pans from which it takes its name.
