The L'Orto Sotto Casa farm was founded in 2016, deciding to expand its vegetable-growing land to the current two hectares; here the seasons and natural rhythms are rigorously followed, and this is where the Lardo Cream with Cipolla di Certaldo is born. Lardo Cream with Cipolla di Certaldo Our company was born with the idea of showcasing the best products of our territory. We harvest every day. But not only that, we do it: early in the morning and in the early afternoon, so as to always offer the greatest freshness. The Cipolle Di Certaldo compote â 210gr. Born from the desire to showcase a true excellence of the territory. This onion has characteristics that make it unique. It can be eaten fresh or as a compote. Thanks to its strong yet at the same time sweet flavour. It is mentioned in the Decameron by Giovanni Boccaccio, which testifies to the fact that it was already being grown and eaten. The onion motif then appears in the 12th century, on the ancient coat of arms of Certaldo. The onion stood proudly on the white field of the shield with the motto "By nature I am strong and sweet still/ and I please both those who rest and those who work", a testament to the importance of this variety in the area. The compote is made with onion and with lardo aged in seawater from Sardinia. Pairing: Ideal for filling focaccia baked in wood-fired ovens. To accompany boiled potatoes or soups. Perfect with beans or served with fish.
