Caviar Taggiasco â The Caviar made from taggiasca cultivar olives: small and meaty, with a sweet and unmistakable flavour. The paté is creamy and highly versatile in the kitchen.   • Le Delizie del Cupin is a Ligurian company whose roots lie in a tiny village of 50 souls in the Ligurian hinterland devoted to agriculture, surrounded by a veritable âforestâ of olive groves of taggiasca cultivar, and it is here that the Caviar Taggiasco is born

    The Company

    True to his origins and to his Ligurian traditions, Marco Donato founded his family business. His project is to produce, on a family-run basis, a range of products focused on quality and the genuine taste. Delicious food, healthy organic products. To create them, he chooses only the finest selected raw materials and works them without preservatives or added colourings.

    • Â Healthy, genuine products that meet the taste of nature. The ingredients are selected from our partner producers with high standards certified by the EC mark on every product. And the recipes are a tribute to Italian farming tradition. Flavoured with spices alone and sea salt.
    Fun fact: Marco collected the recipes handed down by his grandmother, makes them by hand, and offers them in his jars. Jars that in the Ligurian dialect are called âi cupinâ. Discover our cupin!

    Caviar Taggiasco

    • The company is nestled amid taggiasca olive groves. We are in fact near Imperia, the region of choice for this olive variety. The olive of taggiasca cultivar is typical of Western Liguria. They are small in size and elongated in shape. Taggiasca olives have an unmistakable, delicate flavour. They are characterised by a sweet and fruity taste.
    • It is the caviar of hand-picked taggiasca olives. Inspired by the preservation methods of the past, the olives are brined, treated in water and salt, followed by smoking with olive wood. A process that takes months of work to create the caviar tierra taggiasca, âtierraâ in tribute to the fertile land that covers the wild areas of Western Liguria, âtaggiascaâ in tribute to this ancient cultivar, and to the quality of an exceptional olive. Its aroma is intoxicating, recalling that of the olive mill in full pressing and of new oil. Presented at Sial Paris 2022 as an Innovative Product
    • Try it with: Great for tasty crostini to serve as appetisers. Enjoy with raw vegetables for pinzimonio or grilled vegetables, to prepare delicious canapés.
