The Suino Nero dei Nebrodi is an indigenous Sicilian pig breed raised for centuries in the mountainous and wooded areas of the region. It is easily distinguished by its dark, almost completely black coat, its rustic build and its great ability to adapt to the natural environment.
It is traditionally raised semi-wild or free-range, feeding on what the land offers: acorns, roots, wild herbs and cereals supplemented by the farmer. This type of farming gives the meat unique organoleptic characteristics, making it particularly prized. The Suino Nero dei Nebrodi is raised semi-wild on 140 hectares of predominantly wooded land, where it can move freely and feed naturally on acorns, roots and wild fruits. The unspoiled environment of the Parco dei Nebrodi and the richness of its ecosystem contribute to the animals' wellbeing and give the meat distinctive quality and organoleptic characteristics.

We operate a closed-loop system, following every stage of the animal's life, from birth to processing. Our pigs feed mainly on the natural resources of the woods, with only Sicilian barley as a supplement. Continuous grazing promotes high assimilation of Vitamin E, giving the meat superior organoleptic and nutritional qualities. Each animal is registered with the ANAS Registry, guaranteeing the origin and purity of the breed. Processing takes place in our curing facility set in the woods, with manual processing and natural ageing that enhance the aromas of the territory.

This natural diet contributes to giving the meat an extraordinary quality, characterised by intense and aromatic flavours.
To prepare the mortadella, high-quality meats are selected, finely ground and enriched with choice fat cubes that give the product softness and juiciness. The mixture is flavoured with black pepper and wild fennel, which give the cured meat a fresh and slightly spiced aroma. After stuffing, the mortadella undergoes slow cooking that allows the flavours to blend perfectly, maintaining a soft and velvety texture.
Appearance When sliced, it is compact and homogeneous, with the typical pink colour of mortadella, enhanced by white fat cubes and small flecks of black pepper and wild fennel distributed throughout the mixture.
Aroma The aroma is fragrant and aromatic. The sweet notes of the cooked meat blend with the spicy hints of black pepper and the fresh, slightly balsamic nuances of wild fennel.
Texture The slice is soft, velvety and pleasantly juicy. The fat cubes help make the texture creamy and delicately melt-in-the-mouth.
