The Salumificio dei Castelli is located in the heart of the Province of Vicenza, where it carries on traditional Venetian norcineria (pork butchery), and in particular that of Vicenza. We are in the homeland of Sopréssa, which since 2003 has been awarded the Protected Designation of Origin, the first among Venetian cured meats to obtain this recognition â this is where Soprèssa dei Castelli is born
The Protected Designation of Origin has distinguished Soprèssa Vicentina since 2003. Protected by a strict production code, it is made exclusively with pigs born, raised and slaughtered in the province of Vicenza, using all cuts of the pig, including the finest ones, to obtain a product of true excellence. Soprèssa Vicentina is the cured meat par excellence of Venetian tradition. Made with the finest cuts of pork, its balance between fatty and lean parts gives it extraordinary sweetness and softness. These characteristics are maintained even after long ageing. Available in pieces of about 1 kg, in the two traditional variants: plain and flavoured with garlic. Cylindrical in shape, the texture is compact and at the same time tender; the slice shows a mixture with ivory-coloured flecks distributed so as to envelop the muscle fractions, leaving the product soft. The grain is medium-coarse and the colour appears pink tending to red. The texture on the palate is soft. Salumificio dei Castelli offers it in the two traditional variants: plain and flavoured with garlic.
