Limousine Bresaola is a high-quality product made from a prized cattle breed originating from the French Limousin valley. Its taste is soft and delicate, the meat extremely tender. Aged for 35-40 days, Limousine bresaola is excellent enjoyed on its own and used in a wide variety of recipes. It lends itself to countless culinary interpretations, because this special cured meat, besides being served as a starter and used to fill tasty sandwiches, is increasingly finding its place in first and main course recipes. Brisval was founded by a group of entrepreneurs united by their bond with their homeland, the Valchiavenna, the Lombard valleys that, together with Valtellina, gave birth to bresaola, the most famous of beef cured meats. From this passion came the idea of enhancing this product by selecting the finest cattle breeds, both Italian and foreign, with unique characteristics such as the Limousine Bresaola. The Limousine cattle breed originates from France, more precisely from the Massif Central area, and is easily recognisable by its beautiful red coat. It is an animal that can easily be seen grazing in our region too. Historically, in its relationship with man, it represented an important support as a working, dairy and meat animal; over time this triple versatility has diminished, so that today its use as beef cattle is almost exclusive.
Limousine meat is very well suited for this purpose, being rather lean and with a good texture. The company uses the best cuts from young beef (Vitellone) and Scottona (young heifer), The bresaole are spiced and hand-processed according to traditional methods, one by one, aged for at least 35 to 40 days. Perfect to enjoy without any seasoning, it is the star of numerous recipes and can be served as a starter, in salads, and in first and main courses. Only fresh, carefully selected meats, the finest cuts of Limousine and the absence of preservatives give rise to true delicacies; all products are free from allergens, gluten and lactose.
