profile: Sicilian Thyme
the genre Thymus probably owes its name to the Latin “Tymis” or “Thymosus", Meaning what "that has perfume” or from the Greek Thymos, “soul”; it could also derive from the Egyptian “tham”, a term that referred to a plant that was used for washing the bodies to be embalmed. It is a typical species of the Mediterranean bush with cottony and whitish leaves. It blooms from spring to autumn, its ideal habitat is sunny soil and it is harvested from May to all summer. The leaves and flowers are used.
Thanks to its scent and aroma, thyme is much loved in cooking to enrich and season soups, sauces, legumes, vegetables, recipes with mushrooms, oils, aromatic vinegars and to prepare roasts.
Particularly rich in thymol, has antiseptic, antibacterial, disinfectant and diuretic properties; it is effective against numerous urinary, gastrointestinal and respiratory tract infections.
