The name sage comes from Latin save (safe – healthy) and refers to the healing properties of this plant known since ancient times. It is a typically Mediterranean species, evergreen with opposite leaves covered with a typical down. Its flowers have a color between blue and purple and it blooms in summer. Its habitat is rocky and stony soils. It is harvested almost all year round but in particular from spring to July and its leaves are used.
In ancient Greece as well as in ancient Rome it was used as natural preservative for foods, covering them with sage leaves. It is widely used in cooking, perfect for flavor roasts and legumes and finds its natural expression as a condiment together with butter in fresh stuffed pasta. Also perfect for flavoring vegetables and cheeses.
