Water, flour organic wheat and bran of ancient grains, salt, organic extra virgin olive oil and natural sourdough, here are the ingredients of this piadina super fragrant. A simple dish but one that has its roots in tradition, a tradition that the company carries forward with pride and passion.
The company chose to prepare the ancient grain piada just as a local custom teaches, learned in the many kiosks where it is still cooked today. This is the recipe but what is the secret to making it like this? soft and fragrant? Ingredients of top quality: wheat flour exclusively from Romagna, the whole sea salt from Cervia and extra virgin olive oil from the Rimini hills. The care in the preparation: skilful workmanship that strictly respects tradition and is inspired by piadina kiosks. It is only the wisdom and passion of those who prepare it and pass it down for generations that makes the difference.
The discovery wants to pay homage to the flavors and aromas that surround the house, the scent of bread, a scent that restores and welcomes you from the day. Like all simple things, produced with few ingredients are the basis of a good result together with the manual skill of those who prepare them. And then our piadinas are pre-cooked one by one per plate.
We select raw materials of excellence, the 95% comes from the Romagna area. The piadas are cooled to room temperature: the product does not undergo any thermal stress and retains all its fragrance which is released when the package is opened!
Ancient Grains
Among our artisanal piadinas this is the one organic piadina that was created for all those who seek taste combined with the search for ingredients that combine the healthy and the natural. To make it we have selected a mill that follows organic farming. With the practice of crop rotations, green manure of beans and other legumes, thus being able to benefit from important nutrients and is able to ensure sustainability. The result is the obtaining of a raw material of the highest quality. Here we use the ancient grains which: Rieti, Gentilrosso, Inallettabile, Frassineto, Piave, S. Pastore, Fiorello, Belvedere, and Marzotto. Both pure and in blends, all organic. The grinding is done on stone in a slow and delicate way. Here is the germ and the flour produced and used by us to make this piada, has the nutritional characteristics of the whole grain. Not only is research done for the flour but also for all the other organic ingredients that compose it.
