Ours is a small reality where nothing is left to chance. Here we produce our wines using only our grapes. The vineyards are located between Monforte d'Alba, New, La Morra And Barbaresco. Areas particularly suitable for adults Langhe wines. We take care of the whole process: from production, to refinement to sale. We follow the whole process to guarantee the best quality.
Variety: Pelaverga Small 100%
Harvest: manual in crates.
Vinification: destemming, pressing and cold maceration for 72 hours, with 2 closed pumping overs every day in a thermo-controlled steel tank. Fermentation lasts about 9 days followed by maceration for about 15 days.
Aging: 10 months in wooden barrels of different capacities.
Production: from 800 to 1 600 bottles per year.
Tasting notes
Color: ruby red with violet reflections
Smell: intense, fragrant, with its spicy characteristic. Taste: dry, fresh, velvety, with aftertaste of black pepper
Service temperature: 14-18°C
Recommended pairings: cured meats, semi-hard cheeses, white meats such as roast rabbit.
The name: “Daje mach” in Piedmontese dialect means “get down to business”.
