You may ask yourself: but Pezzetta, which is a reality firmly rooted in the territory of Friuli Venezia Giulia, what fits us with "Cacio e Pepe"? Well, from the experience of Forma di Frant the idea of using pecorino romano DOP to create a condiment inspired by a classic of Roman cuisine: thanks to its creaminess, flavor and practicality it won the first prize in the Cheese section in 2019 ( Dairy) at the Anuga international fair in Cologne. A recommendation: before being seasoned with Pezzetta "Cacio e Pepe" spaghetti, they should be cooked in unsalted or very little salted water. The salinity of pecorino romano DOP is sufficient.

In 2017  Piece has celebrated ninety years of history and in all this time the quality and passion in the work carried out have always remained unchanged over time. Cheese and black pepper a solid cheese composed of Pecorino Romano PDOcream And pepper. It was born almost by chance but was immediately appreciated, as it is easy to use, great yield and excellent quality.

Dressing inspired by the classic Roman recipe “Cacio e pepe” made by mixing Pecorino Romano DOP, cream and pepper. The result is a form with compact dark yellow paste, without rind and with the presence of spice. The flavor is typical of the cacio e pepe dressing, characterized by the pleasant contrast between the sweetness of the cream and the spiciness of the pecorino romano and pepper, easy to use and good yield without sacrificing quality.

La storia dei formaggi Pezzetta inizia al femminile nel 1927 in un paesino del Friuli quando nonna Ninfa, rimasta vedova in giovane età e con tre figli piccoli da sfamare, grazie ad una licenza alimentare baratta al mercato di Udine prodotti del suo orto con forme di “Latteria” che stagiona, affina e rivende al suo paese. L'esperienza e la passione per i formaggi si tramanda per tre generazioni ed oggi i fratelli Marco e Paolo Pezzetta dispongono di 12 celle per stagionature differenti, di un  caseificio ad Ovaro a 527 m s.l.m. nell'alta Carnia e di un prosciuttificio a San Daniele del Friuli. Ecco perché sono in grado di offrirci non solo stupendi e pluripremiati formaggi, ma anche prodotti tipici del territorio friulano: un territorio che riserba inaspettate sorprese ed è in gran parte ancora da scoprire.
