The company's commitment to study and work campaigns in the marine field. Futura Prima, the Family's boat, fishes for blue fish in Sicilian waters all year round: sardines, mackerel, horse mackerel, bogue around the Aeolian Islands, and anchovies, especially between May and July, in the Ionian Sea. To obtain a good and healthy product, less than twenty-four hours pass between the catch and the start of the preservation process.

very short supply chain and circular work for the family, who therefore handle the preservation and processing of bluefin tuna and blue fish at their plant in Capo Passero. This guarantees a high quality standard. Sea of Sicily means alici: elongated-shaped fish, silvery with a blue back, known as anchovies. The family's second fishing boat, the Futura Prima, dedicates itself between May and September to anchovy fishing in the Strait of Sicily and in the waters of Trapani and Capo Passero. For anchovies too, timing is essential: caught with a special net and processed within 3 to 12 hours. From Alici to Acciughe The anchovies arrive at the plant at +4 degrees and are immediately transferred to a holding chamber. They are promptly cleaned of head and viscera and, within two hours, salted and placed in special containers: the âcugniâ, which are then transferred into seventy-kilo drums, on which weights are placed: pressure will draw out the excess blood and water. After maturing, they are removed from the salt, deboned, and the jar is filled with cold-pressed seed oil. And here is the delicacy, ready to enjoy.
