Evosì 250 ml â 80% Nocellara del Belice and 20% Biancolilla The olive groves from which EVOSà is born are located in Menfi, in the Agrigento hinterland, an area traditionally suited to olive growing thanks to its position and climate. Here, a thousand majestic Nocellara del Belice trees and about a hundred Biancolilla plants grow, cradled by the sea breeze and caressed by the Mediterranean sun, on fertile land that tells centuries of agricultural history and rural culture. We firmly believe in total transparency towards our customers and in the guarantee of offering a genuine, healthy and safe product. Filtered and stored in silos under nitrogen in a temperature-controlled environment, and finally packaged in small batches by hand in elegant cans. Produced with IGP SICILIA certification, EVOSÃ is born from a skilfully balanced blend of two native cultivars: 80% Nocellara del Belice, robust and harmonious, and 20% Biancolilla, delicate and fragrant, resulting in the perfect balance between strength and finesse.
The olive groves are located in Menfi, in the inland area of Agrigento, in a region devoted to olive growing by tradition, position and climate. Here, a thousand majestic Nocellara del Belice trees and about a hundred Biancolilla plants grow, caressed by the sea breeze and the Mediterranean sun, on fertile soils that tell centuries of agricultural history and rural culture.

Sicilian cuisine is a treasure trove of influences from Arab, Greek, Spanish and Norman cultures, an immense heritage of knowledge and flavours that EVOSÃ embraces in every drop. Its full flavour, herbaceous notes, fruity aroma and slight final spiciness make this oil the ideal companion for grilled vegetables, legumes, fresh fish, white meats and bruschette, as well as more elaborate dishes.

Variety: 80% Nocellara del Belice and 20% Biancolilla. Nocellara del Belice is the most prized cultivar among the native Sicilian varieties. Cultivation: 1000 Nocellara del Belice trees and 100 Biancolilla trees, aged between 60-70 years, located between the Cusa quarries and the archaeological park of Selinunte. Production area: Menfi, in the province of Trapani, Sicily. Soil: flat, red-sandy. Altitude: 110 m above sea level. Harvest time: in the last ten days of September to the first ten days of October. Harvesting method: carried out by hand, the olives are selected and placed in well-ventilated 20 kg crates. After an initial defoliation, they are taken to the oil mill, 10 minutes from the olive grove, and pressed within 6 hours of harvesting. Milling: cold, continuous two-phase cycle, in the absence of oxygen and at controlled temperature (max. 27°).
Tasting notes: Colour: green with golden highlights, with an acidity not exceeding 0.1. Aroma: presents a light fruitiness of green olive. Fresh and citrusy with light hints of wildflowers, aromatic herbs, notes of almond, artichoke and tomato. Flavour: fine and delicate, revealing pleasant sensations of bitterness and spiciness, with an intriguing spicy finish of white pepper. Culinary pairings: with its unmistakable flavour. It gives the palate a pleasant briny, sea-like sensation, capable of enhancing the taste of many dishes, making them even more delicious and succulent.
