Thanks to the recovery of an antique wood-fired roasting machine entrusted to expert master roasters, Vezzali coffee is slow-roasted over wood, followed by a gentle air cooling. The heart of Vezzali's quality is the slow wood roasting: carried out using prized woods such as oak, beech and orange tree. This traditional method allows delicate heat control, avoiding overheating of the beans and enhancing their natural characteristics. The experience and unique method of slow wood-fired roasting over a direct flame enhance intense aromas - a smooth taste and a lingering aftertaste, offering an authentic sensory experience.
Hand-picked and processed using the "washed" method. Our coffee is sun-dried and left to rest after roasting for a balanced, full aroma. Slowly roasted on selected wood, it develops up to 850 aromas, with intense and harmonious notes. A natural, eco-friendly roasting process with a unique taste. Each type of wood imparts different notes; for example, oak brings deep, intense nuances. Moreover, burning wood is an eco-friendly process.
A complex process, but one that allows us to achieve a coffee with an intense, clean taste, rich in natural aromas. We roast the coffee for over 30 minutes, over a live, direct flame, which develops the aromas through natural chemical reactions (pyrolysis and the Maillard reaction). The result is a coffee with bold flavours and a clean, lingering aftertaste. The beans are rigorously selected, the fire is always lit in the same way, and the wood is chosen according to the desired roast. Each batch is tasted to verify its quality. The wood is the key element that gives natural warmth and unique aromatic profiles. After roasting, the beans are cooled in natural containers and must then rest. We focus on the quality of the raw material, meticulous attention to detail, and respect for the environment, producing a coffee with an authentic taste, rich and harmonious.
