In 2017 Pezzetta celebrated ninety years of history, and throughout all this time the quality and passion put into their work have always remained unchanged over time. This is where the Latteria di Grotta cheese is born.

Staying true to their Friulian roots and its products, once their expertise was refined, they devoted themselves to the world of dairy and its products, among which the Latteria stands out. When age-old farming tradition meets skilful ageing. Wrapped in straw and placed in a tuff cave, a cheese unique in intensity of aroma and flavour is born.
The starting product is a Friulian latteria cheese made with thermised milk. It is aged for 3-4 months in ageing cells at controlled temperature and humidity, and then further refined for another 3-4 months in an eighteenth-century cave located in a hilly area.
The result is a cheese characterised by a compact, slightly crumbly texture, with woodland aromas given by this particular type of ageing. It is delivered with the rind covered by the straw used in the cave to keep the cheese dry from humidity.
